Peel and blanch the fresh green peas. 5 minutes in the microwave on high power then soaked in cold water
Wash drain and chop the methi leaves
In a mixer, grind the onion ginger seeds cinnamon and cardamom to a smooth paste with a little water
In a wide pan melt the ghee/ add oil and fry the methi leaves till they wilt
Add the ground paste and fry till the raw smell goes away
Add the milk slowly when stirring so that the paste is well combined
As the mixture starts to bubble add the blanched green peas and enough water to get a smooth gravy consistency
Adjust the seasoning and add water if required.
Bring everything to a boil
Serve hot with phulkas or rotis 💚
